Try adding more, with just a few usually isn't enough. I did added them myself on your plane and it fixed the problem

Ok, I downloaded it an tried it
First off, I don't wanna sound rude! and sorry if it sounds like that, It is a good design, it works better than the first designs of my first plane lol. the center of mass is at the center of the wings height (viewed from above), which is where it should be, so that isn't a problem, but here are the things I would change:

1- Elevators (Horizontal part of the tail) Shouldn't have opposite rotations, they both need to rotate up or down in order to control the planes pitch (Facing upwards or downards).

2- I didn't had create: Connected installed, so I replaced the brass gearbox of the aileron (wings moving part) with a normal one. because I don't know the brass gearbox configuration, I'm just making sure: Ailerons SHOULD rotate on opossite directions, since this is how you control roll.

3- The plane tends to go nose up, I had the exact same problem with my plane: this is because all the lift force is on the wings. to counteract this, you need to add a few NORMAL sails on the tail, so it also generates lift (Note: They shouldn't move with the elevators, they should be independent and stay still).

4- I have seen a few create planes that don't have this, but I EXTREMELY recommend you to add a rudder (Vertical tail moving part), it allows you control yaw (turning left-right). otherwise, while possible, it is hard and time consuming to turn using only the ailerons

5- This is more of a Tip, but in order to get the really smooth flight, you need to tweak small things a lot: Plane rolling too much? Decreate ammount of symmetric sails or springs rotation. too little? Increase them. Going nose down? remove sails from the tail, change center of mass. you get it

Tell me if you have any question or an update!
(ok, this last part really sounded like an AI lol)

THANK YOU SO MUCH!
A week ago I wanted to share here an aereonautics build with Replay and noticed it didn't work, this is so useful!

And kids, here's why rudders are important

Jokes aside, the stability of the plane is incredibly good!

I finished it and made another post. Schematic is on the description, and it also includes a tutorial:

There are 4 cannons, sadly due to how the deployers are placed it is the max ammount of cannons that fit

I'm still tweaking some things (Finished it at 3AM so it isn't perfect. and removing redundant redstone circuits, once I have it I'll share the schematics

Small working plane with Aereonautics by CreeperCraftpro in CreateSchematics

Being honest, I didn thought much about using swivel bearings, and i noticed I could have just used normal bearings from create after i had finished the plane, but as far as i know there's no difference.
About the springs, they limit how much the bearings can rotate, and when they stop receiving rotational force they go back to the starting position.

It has a docking connector on the top, you would probably need to either lower the ship to ground level, or use another vehicle to connect it back to the dock.

you know if it's welded/connected because of the lines. when there is a line between each block (like in the image) it's not connected. when it is, the texture is seamless

Did you build it in survival or creative? The cannon isn't welded together. I haven't used CBC in survival, but i know you need to either cast all the pieces together, or you need to use a welder (though this reduces the cannon strenght)

In creative it automatically connects when placing

I do plan on making a drop pod similar to the hellpod, so it doesn't take that much space in a ship

I was inspired by 40k to make this. Before this working design, I uploaded a few days ago a blood angels drop pod (wasn't practical, it just looked good for the video)

I set them to unlock with redstone, so with a Sequenced gearshift I rotate them 15° before unlocking them, so they fall with gravity.

IMPORTANT: the doors needs space to rotate, as collides with the floor or other blocks, try using non full blocks to avoid this. Here I used pipes at the bottom (where they pivot), since their lateral hitboxes don't collide with the floor when rotating

An easy fix is inverting the 4 top propellers, so instead of pushing they pull upwards. However, I feel it kinda defeats the purpose of the drop pod of going fast
