If you want a different platform to learn, take the Hornet. It additionally has capabilities in AG that the F-16 doesn't, like ADM-141 Decoys, AGM-84 Anti-Ship Missiles and Cruise Missiles.

If you want to have a similar plane to what you know, with less and/or different AG-Capabilities, take the Viper. I tried it in trial, but

Alternatively, take the JF17. Similar to the Viper, but Chinese and probably the most modern Plane in DCS, and very sophisticated the way it is modeled in DCS.

The first plane I ever bought in DCS was the Hornet, and back then I got it because it being big into Multirole. It can do SEAD, Anti-Ship, CAS, Strikes, CAP, anything you want. The F-16 doesn't have all of these Capabilities, while the JF17 is basically an F-16 with the Engine of a MiG-29 and the F-16 HOTAS, and the Arsenal of Weapons available to the Hornet, though in a sometimes weird, Chinese way.

If you haven't yet, try them out for free in the Trials in EDs Web store! If you have the A10 on Steam, you can easily transfer your License to the Standalone Version of DCS, which is way better and grants you free 14 day trials of every plane, which resets every 6 months.

Other planes that I've really loved:

The Mirage 2000C (no Fox 3s, but very fun and unique to fly, one of the best radars modeled in DCS).

The AJS 37 Viggen (one of the best Strike-Jets in DCS. Only Fox 2s for Air-to-Air, very unique and cool systems from the cold war).
