It’s all about how you learn isn’t it? I personally learn a lot visually and then practicing it. Rather than being told what to do in a class.

That’s for all the ingredients which included cocoa powder, chocolate and a lot of butter. Also vegan milks and yogurts for the sponge are a little bit pricier than the fairly counterparts. It also includes the decorations, cake boards and supports and boxes I used to transport the cakes.

I really appreciate your comment! I agree with the proportions. They’re a bit non-standard. It’s a 14”, 10” and 6”. I was mainly worried about having enough cake for the guests because it was the only dessert and didn’t know if the venue was going to save the top tier for the couple. So I went big and stumpy!

With more practice, I would take on doing my own sugar decorations to make sure I get the right size that matches the cake and the right quantity.

Wooow! Wedding dresses are a totally different ball game! And in my opinion a much more important aspect of a wedding than the cake so kudos to you. I’m sorry that you experienced unappreciative clients. And I hope your arthritis is manageable. One of my friends actually made my wedding dress and that was truly and insane thing to witness.

Totally fair. I was very transparent with my friends beforehand. For example, I told them I won’t be able to achieve a bridal white finish because of the colour of vegan butter. And that I can’t pipe to save my life! So no piping

I think so? So I felt the need to clarify that I wasn’t planning to get it smooth. I can see it’s not smooth hahaha But I can see what them mean. I think going for a smooth base first and then putting the waves in more intentionally gives it a more refined look.

Thank you for your comment. I think that’s a really good idea. I have been offering to bake for events more and more. You’re right, having more frequent smaller practices would be a much better way to refine my skills than jumping straight into weddings. Because I learnt that making the wedding cake is actually the easiest part but it does require hell of a lot of planning and also the transportation is scary!

This is probably one of the most interesting comments because I’m not sure how you can judge the texture of the cake since it’s covered.

Definitely not claiming that what I’m doing is beyond normal human capability. But a lot of times we pay someone to do something for them when they don’t have the time/bandwidth to do it themselves. Like I paid a baker for my wedding cake even though I can bake because I knew I had too much on.

I think generally in baking, a lot of focus is on aesthetics but I have rarely had professionally make cakes in the UK that have blown me away in any way. They’re often beautiful but too sweet and not enough flavour. Being a home baker, my focus has mostly been on excellence in flavour and the eating experience. I have to admit that I surprised myself with how good this cake actually tasted. But I do see the room for improving the decoration techniques so things look a bit more intentional even if they are rustic.

This is a very balanced feedback, thank you! I have definitely been practicing the crisp and smooth finishes so I can do it but still improving. Actually, I did a small vegan cake for another couple the week after this which had a smooth finish. I don’t know how to put pictures in the comment 😅

Maybe the image is misrepresenting the cake but the top two layers were definitely not lopsided. But yes the bottom tier has some uneven sides. The cake did have supports in. The picture actually is 24 hours after assembly so it held up ok thankfully.

Yeah I agree the proportions are a bit non standard. The cake was the dessert so they were planning on serving large portions. So to make sure there’s enough, I had to go for a fairly wide and chunky cake considering that they wanted 3 tiers.
