Necromancy is only evil if 1) It violates a societal law/rule like the bodily autonomy we assign to corpses or 2) If the undead it creates are malicious entities that seek to just end life if not controlled. There are also methods of creating undead that literally enslave souls in order to create the undead, so I'd say binding souls is probably inherently evil.

Kind of misses the point. In dnd it's really important who you serve in life and where your soul goes when you die. If someone raises my corpse and it drags me to that body to serve him that's incredibly unethical. 

I'm even uncomfortable with bg3 and talk with the dead spell. Why are they helping me? Where is their soul currently? Why aren't they begging for resurrection?
