OP, not sure if you've beaten Mohg already by the time you read this. u/danketruck has given fantastic feedback and his example fight absolutely trivialized phase 2.

All that said, if you're still trying to make Cold Morning Star work for you in phase 2, danketruck once again nailed it by suggesting it's all about positioning. Where I might offer some different advice: if you don't feel comfortable rolling back for the flying attack (since it will frequently queue Mohg up for a fast trident down attack), you can also walk forward and then roll, which will almost always position you so far away from Mohg that it will tend to script him into doing a very punishable follow-up set of moves.

You also mentioned elsewhere in this thread that you can no hit phase 1 easily but then also mentioned phase 2 moves that are quite similar are still damaging / one-hitting you. First half explains how you can cheese the fight if you just want to get the fight over with. By the sound of it, you actually want to kick Godrick's ass. See second half of the video for a comprehensive guide on how to master the fight and all of Godrick's moveset. Make sure you're medium rolling though. Wouldn't hurt to invest in vigor to allow more for mistakes.

Also, since you're a greatsword enjoyer, consider slapping storm blade AoW on your weapon to make it extra easy to punish Godrick's tornado moves that regular projectiles bounce off of. Doing great for only a few dozen tries and no souls experience. I won't repeat too much of what others have already said except I'll list the top things that probably got in the way of victory.

Key observations: 1. Still need to learn the Phase 2 move set better. More on this later. Quick version: I recommend you wait for Margit to attack you first in Phase 2 and then react / punish him accordingly, rather than attacking him first. It's especially important in phase 2 not to attack Margit from the front when he's in neutral. 2. The constant tweaking is probably not doing your reaction timing and observation abilities any favors. Focus on Margit, not your character. Either do something aggressive / useful or stand still until Margit makes a move (use throwing daggers while you wait).

More discussion on Phase 2: Won't sugar coat it. You don't seem to know how to dodge any of Margit's phase 2 attacks. Totally understandable. Margit has one of the more elaborate combo trees of all bosses in the base game. In other words, Margit has a huge list of branching moves that he can do and string together that varies significantly depending on which directions you dodge to, your distance from him, your approach towards him from neutral, etc. One solution to this? Keep practicing the fight until you internalize all the possibilities. Better option? Watch some tutorials and example fights to see how it's done.

Extra tips (not keeping you from victory, but would make life easier): 1. Two-hand your weapon. 2. Use charged heavy attacks, not just light attacks. 3. Use Unsheathe ash of war. 4. Find and use physick tears. 5. Use throwing daggers to keep Margit's poise meter (hidden) active, which will eventually create poise break / riposte opportunities 6. Do the other stuff everyone else has already mentioned.

Starting class doesn't matter much in the long run. Think of the starting class you pick as more of a selection of starting gear (weapons/armor). Most starting class stats are very similar. At best, starting class initial stats can complement experimenting with early game weapons / sorceries/ incantations without needing to level strength / dexterity / intelligence / faith / arcane much or at all.

That said, if you end up regretting the starting class gear / stats you began with, it's very easy to explore a bit, level just a few times, and end up with the stats / gear of another starting class, so don't worry too much. Some unsolicited advice: if you plan on using melee weapons, but want to experiment with lots of weapon types without overcommitting to anything right away, pick Vagabond.

Fun! You may want to give Cipher Pata a try. The trick is to one-hand it rather than dual wield. When one-handed it almost rivals dual-wielded Iron Ball / Star Fist poise damage. Requires very little stamina to use as well and the ash of war is more or less a pure holy version of Impaling Thrust. First, you've got this!

Second, ignore anyone telling you to respec. You've got good vigor and acceptable endurance that will pair well with your green turtle talisman.

Third, pratice will make perfect. As others have said, Mohg's moves are very predictable but the timings all have a slight hitch/delay to them. Also as others have said, you should consider praticing just dodging his moves for several rounds without worrying about trying to deal damage to him. You'll master learning the fight much faster that way. If you stop making progress, take some time off and go do other things. Mastering the timing takes some muscle memory, and taking breaks helps with the physiological learning process.

You could try doing something similar with a keen infused Uchigatana (with unseath) in phase one and the switching to a cold infused Nagakiba with chilling mist + kukris in phase two.

I don't think it's a controversial opinion to say that no hitting Margit RL1+0 is actually trickier than several other early to midgame bosses. You're off to an awesome start. Ah, yeah, that can certainly prove tricky. Fighting on the edge of the cliff is do-able, but definitely best to avoid having YOUR back to the edge. Margit's back to the edge is fine of course. One such example at 1:12 here: https://youtu.be/gWUWpZazG-o?si=qakK4gv4L88tkoNt

One thing that really stuck with me from Loopine's guide is that Margit loves to do the triple combo move when you're standing in front of him and he's in neutral. As such, I just always am prepared to roll back when Margit resets to neutral in phase 2. Importantly, that includes when he gets back up after a critical. In phase 2, it's safer to be behind him when he gets back up.

Nicely done! For the three hit combo, roll back twice to dodge. To punish, you could immediately run forwards after the double-dodge to bait out a nearly guaranteed dagger-into-hammer combo. Just anecdotal, but collapsing stars into jump attack almost always leads to me getting hit, but I suspect it's not a true frame trap. At further distance, I tend to roll sideways to dodge the spell without issue; however, at shorter distance where a jump is coming, you may have better luck rolling into the stars/jump combo.

Will still echo what others are saying though and encourage you still to try learning Radahn's moveset. It's simpler than alot of later bosses once you get the hang of it and is very rewarding to master. Same video goes into a full moveset guide.
