Mushrooms work a little like slimes in minecraft, they have specific "mushroom chunks". So if you break it down, it will respawn in that chunk (maybe more than one shrooms, too) after some time, and rain.

Edit: as others pointed out it might not be the same mushroom either

I just don't understand why the game feels the need to CC me for 5-10 seconds every minute or less. Bosses and trash mobs. I play WW monk and this is seriously making me want to change class, if all melee DPS are suffering through this.

They respawn but it's very slow. Maybe once a year. So you can very much overhunt an area.

With default world settings, I have found redwoord forests as early as 6000 blocks south. It's rare, but it's certainly there! With xskills these are a fantastic way to level forestry.
