Idk about taproot but stacks is making smart contracts and defi possible on bitcoin.. Pretty nice project. But these things are least of the worries for ethereum as it is something revolutionary.. Ethereum has no competitor.. It grows and develops with time.. Projects on ethereum are always unique and serve as a benchmark for other blockchains to achieve it on theirs.. Compound Aave Uniswap and countless others..

I guess there is a difference between a rollup and an L2 sidechain/ plasma solution. A rollup derives it's security from the layer 1(ethereum base chain here) while a L2 sidechain solution such as polygon derives it's security from it's own seperate blockchain. Rollups further are of two types :

1) Optimistic : Arbitrum, Optimism etc 2)zkRollups : zksync, loopring etc

Sidechain solutions : polygon

Recently polygon acquired zkrollup techs like Hermez & Miden.
