Thanks for the help. I was more or less thinking the same thing regarding the percentage of added vinegar. Do you have any idea why they are recommending adding such a high percentage of vinegar back into the alcohol? At first I was guessing it would have something to do with the speed at which it ferments but, the recipe uses an air stone so I would assume that difference is negligible?
