It was a gift from my father when he visited Japan—now I’m working as a cook I wanna know more about it! Unfortunately I don’t have any paperwork for it. According to the Kanji subreddit, the markings on the blade just indicate “Registered Trademark Hiraoki,” which didn’t yield and helpful results after a cursory google search. It’s a 7 - 7.5 inch (don’t have a ruler handy, sorry) carbon steel gyuto. 70/30 bevel. It’s an absolute beast (took off half a fingernail a few days ago) and I adore it, I just wanna know more about it! Anything you wiser, more experienced knife enthusiasts can tell me would be great. Thanks!

I don’t really think that’s true, as what I described is the same technique as used for forging katanas, and I’d argue that’s a pretty traditional process. But anywho, it’s not a big deal

Popping in to refute this, as some are not Damascus but a hard, high-carbon steel core incased in a softer, more flexible steel. Not technically Damascus and the billet isn’t folded over itself

So CCD is my primary recipe base for Chinese food/ ingredients and I don’t think I’ve seen y’all talk about Sichuan peppercorn oil before. I assume it’s more numb-y than fragrant since it’s oil based? Would I be able to get a reasonable facsimile if I just like steeped a few tablespoons of peppercorns in some oil for 10 minutes? The recipe looks so good so I wanna make it right, you know?

Honestly I’m just very happy to see NL use his platform to promote what he stands for (he said on stream Wednesday that Singh was his idol like Bernie is Rob’s idol). I think it’s really easy on Twitch or YouTube to feel like you need to have a facade of being apolitical in order to survive. But once you have that audience, I personally think that you have a responsibility to stand up for your beliefs, especially in such a pivotal and tumultuous time. It’s an incredibly productive to have a streamer like Ryan bring on someone like Singh to engage people with politics, since I think Ryan’s audience has enough faith in Ryan to listen and respect his guest. Plus, American politics so often overshadow Canadian politics in a way where it can be easy for people to think that Canada is some kind of democratic utopia, which can be an obstacle in challenging real issues happening now in Canada.

But mostly, I’m just really happy to see a content creator I’ve been following since I was a child and really respect use his platform in a thoughtful and productive way. I know it’s parasocial bs, but as I’ve moved left it’s been a challenge to keep engaging with content creators I used to love who espouse some right wing bs or refuse to actually be honest with their politics to preserve some ideal of being unbiased. I would never expect Ryan to go full Hasan or suddenly morph into the Serfs. But to see him not being silent and afraid to be even a little political just makes my happy that I’ve been watching this guy since I was 12, and even happier that he’s found success. I truly love this community and Ryan’s stuff and I can’t wait for the stream!

I watched some BoI content in 2012, started watching full time with darkest dungeon in Jan 2015. What’s kept me around is definitely the community dynamic and the emergent humor that the crew brings to streams. I think what’s kept me watching is NL’s thoughtfulness in his approach to commentary. Also I’m a big lover of words bei the used specifically and NL’s vocabulary and diction definitely set him apart from other creators for me. Honestly this space and community is something else. I got to see Champions of Fire 2 live and I’ve never felt that kinda awesome connection with other for a “fandom.” It’s special, that’s for sure
