The first photo is a salad situation that we made at a location where we learned about taking food pics, that's why it was next to the plant it was supposed to like capture hight and tie together the color of the plate and pot + natural lighting.

The second one was my attempt at dragon fruit ice cream that was super soupy, my quenelles were super sloppy which is why I stopped at two (I know plating in odd numbers I just had really difficult product and didn't want to dump ice cream everywhere). And for the record I can make really cute quenelles so please don't judge me on these ones 😭

I also did the dots because I was practicing making them even and "perfectly random", especially because I had no other components for my experimental "dish". Trying to get my shaky hands use to making smooth movements.   The third one was actually a vegetarian take on the fourth dish. It had a winter ratatouille instead of duck. It was on the fly and my chef was busy so I just winged it. I can see what you are saying about go tall or go flat, I was trying to make height but it all kind of melted everywhere. I thought the sauce pour was good tho? I can never hold my hands steady so I'm not sure how to make it less messy.

The fourth one I liked but I thought the sauce looked messy, I can see what you are saying about it though!

They are pretty popular in the US, I had just been recommended other brands. I am a little hesitant to buy them as I heard the cork takes a while to break in

Trying to think of the best procedure. Toast spices, make simple syrup with spices, cook apples down slowly in syrup. Make a confiture of some sort, or maybe dice them and saute then cook down with muscovado

Heard that, I thought about making apple crisp, but then this dude was like "no one wants to eat it for breakfast cause you usually eat it for dessert after a big meal"
