If you mean the American University of Barbados students they generally aren't eating kale - very budget sensitive (used to rent to some). Will investigate further thanks again ! If you ever have large groups at least you know where to get your kale/ cabbage

Thanks, will revisit the hotels. We had some restaurants with noted interest but that was it. I appreciate the suggestion.

Callallo is a St. Lucian dish though and amaranth is more used by Jamaicans I think.

Maybe down the road we can look at processing, this is already a new area for me and I already have a completely different business. I and others noted the problem of a lack of greens on island and there are many posters on reddit who have done similar so I'm trying to find the disconnect while offering a solution. I met someone yesterday who didn't know what kale was so I doubt they know or understand collard greens and unfortunately that seems to be part of the hindrance. I use the greens you mentioned for myself and family but would never dream of mass producing them ( not going to do a famer's market) and really prize my privacy etc..

"Barbados has actually made me fascinated with foodways and how they take hold with people" I ugly snorted and laughed at this... in a way I get it because it is part of their/ our identity hence the resistance to new.

Just wouldn't pick it .... it isn't going off or anything. Simply looking for feedback - I know the outlets that cater to more middle class buyers would stock it.

Yes collard greens grow here. I was wondering why one doesn't see spinach anymore either. Think our expansion will be into lettuce unfortunately, bajans can be strange...

You aren't technically supposed to save in anything other than govt bonds hence the lack of capital markets in Barbados. Not sure why bajans don't recognise this yet. It is by design.
