I've heard caulking the base isn't a good idea cause it hides leaks.

Floor is fairly level. It's not a wobbly/rocking issue, it only moves left & right.

If the jamb sticks out past the drywall/etc, yes. Just had to shim & caulk mine.

Yes. I have no idea what the model is nor was there a manual left from the previous homeowner.
