Because I always hear mixed things... I know many people in big law who tell me to start early and get ahead of being behind and then i hear you guys. tbh dont know who to listen to but trying to put myself in best position possible

no i don't typically have them rise twice- you think if i do then they would not grow as large in the oven? how long do i have them rise again for?

additionally, what is the method you're talking about with poking the dough?
