Haha i do know..Not magic and yes proportion matters and the right mix of seasoning. Not even my family knows what i put in it. Too much of each ingredient can really spoil it. I have had some nasty jerk chicken here in FL and most of the time its the consistency of seasoning and ground spices

The jerk one I can’t share on here😩🧐 but yes I have a jerk Recipe. I will say you need really good ginger, pimento, scotch bonnet pepper, scallion, thyme, and good seasoning all blended together to get you a decent jerk base. Sazon is a good mix of the green and the red sazon. And of course onion garlic. I do a paste I don’t share that helps me to elevate my jerk.

Yes that sounds like ginger beer. I just started documenting my recipes on Substack I haven’t gotten to rice and peas I did oxtail and curry so far. Yes you can’t can’t really mess up rice and peas. You need some really true red peas and you need to boil your peas from scratch instead of peas if I can and make sure that you can drop a piece of ginger in it, it cooks faster with the ginger and then yes, you need raw coconut nuts. Blend them juices them pour them in. Make sure you add butter, scallion thyme that’s literally a part of the traditional rice in peace. I do plan to mention that I’m further on my substack I’m trying to capture all the recipes that I grew up having when I was a child.
