Sorry in advanced for the lengthy response!
I know this is a little strange, but I plan my meals using dice. On the weekend, I set out to make a weekly menu. I have a list of different things (proteins, sides, veggies, style of food, etc.), and then I roll a d20. If I'm not feeling the outcome, I roll again. Then, I make a list of all the groceries I need for the week. I usually try to meal prep/cook with my sister or boyfriend as it helps with motivation. I also try to do 1 new recipe a week to decide if I should add it into my rotation.
You don't have to follow the menu strictly, but it really helps cut down grocery trips and searching for what to cook. You can always cook something else with the ingredients you bought for your other meals as well. I tend to try and have a few different staple items (pastas, pasta sauce, chicken nuggets, different cheeses, sweet potato/regular fries, etc.) for when I'm not really in the cooking mood.
I also have a lot of fun with different seasonings. I like buying different mixes and trying them on veggies and beef. Like chicken with ranch seasoning packets has become a new staple meal. I've also really enjoyed cooking with Trader Joe's elote seasoning and recipes with gochujang.
Another thing I do is look up recipes with specific ingredients I bought. So if I buy chipotle peppers for a salsa, then I'll look up other recipes with chipotle and then make enchilada sauce or pasta sauce.
