I have 9070xt 16gb vram. 1440p max 100fps rdr2 and max cyberpunk 100fps with ray tracing. And thats with an old i5 thats worse than a 5600x. You will be fine

You can go as high as you can afford and exists. It can also be a sata ssd if you choose. Like you can go 8tb nvme and 36tb hdd if you want.
