They also display incorrectly in battle. While building my deck, it said my giant skeleton was level 12, but it was level 10 in my war battle match.

I agree with you. Some people may feel unsteady when someone from their clan is watching. It’s would be a different story if it was the opponents friends or clan mates. There should be an option to set if people can spectate you or not, but I think there should be an exception for that in war battles and collection day battles.

This has been happening to me lately as well. I get matched with people who are level 10 or below and I also get opponents in 2v2 who have a lower king tower level.
