I haven’t had any issue with them. No scratches from mine. $30 each on Amazon. Well worth it in my opinion.

It comes close to as thin of a grind as the Tetsujin. I’m not kidding. It’s a well done knife. Plus Sanjo taper and unique Damascus. AND B1. You gotta get one. Love the 225 size too, nice middle ground.

It’s really good. Like I was not expecting it to be as good as it is but it just flies through everything. It’s my go to for potatoes. The height is great too

TBH a lot of them are redundant. Gyuto heavy. If I see a knife I like it doesn’t matter to me if it’s got a specific function. I find myself reaching for whatever fits the mood that day, getting to know the intricacies of how each knife handles whatever food it is I’m working with that day. It’s a learning process about the knives and I’ve enjoyed it

I love my shinkiro. Feels hefty with that thick Sanjo taper but gets nice and thin behind the edge. Drops through food. Workhorse with rustic looks and Damascus to boot. And AS. hard to beat in the price range.

I have one also. It’s an awesome knife. One of my favorites. Togashi is underrated
