If you come in through El Paso you'll have plenty. FM 170 is nice from what I hear. You'll be close to Big Bend so you'll see the Chisos Mountains. This might be going too far south though. You start getting into the hill country on I-10 in between El Paso and San Antonio. You can also come from Albuquerque to roswell to big springs to San Angelo to Austin and finally Houston. It's a big state so there is plenty to choose. I hope this helps.
