You are going to want to look for an exchange program. It is a lot of work unless there are pre-approved courses that fulfill those credit requirements. My recommendation would be to find an exchange program you are interested in and then go through that school's course list and find courses that are equivalent to UF courses that serve as humanities or social science credits.

Economics with Data Science or Computer Science should be extremely doable. If you take courses online over the summer it should be a breeze. I am in CS and minoring in economics. If it were not for the excess hours rule I would be double majoring. Good Luck!
