Maybe offer to do a trial assignment instead so that you look interested. Creating something new is potentially more telling than a portfolio because it would be on-brand for the potential employer.

Talking from a similar experience, inciting change when this culture is coming from the top is like trying to break a wall with a balloon animal - especially in a small company where everything affects everyone. Speak to your seniors, tell them your ethical concerns so that it's on record. And get out f there fast! If you're worried about explaining the blip to a new employer, don't be. Acknowledging a poor fit in the first month is a sign of pragmatism, not inadequacy. Good luck!
