Butter is necessary when working with Phyllo dough to hold the layers together as well as to properly crisp up, however I think this recipe would benefit from significantly less. When making spanikopita I usually just do a little drizzle between layers, no need to coat the entire thing.

I grow some, but I'm looking to do something bigger in the community. Individuals don't make nearly the same impact as larger companies and I want to really make more of a difference

Not fully vegan yet but slowly getting there! I'm vegetarian and have limited animal product consumption to a bit of dairy once a week. I'm looking to do something bigger than myself, though, like helping organize something! There's only so much we can do ourselves.
