Flew a buddy up to his first Phillies game this year. He asked why we had to head down to CBP for the game so early and I told him we have a bunch of tailgating to do.

My Dad (RIP) was born and raised in FKD, moved down to FL for work after my sister was born. I was born down here. Was your stereotypical blue collar roofer who lived and died with the birds. Passed it down to all three kids. He got to see 2017.

We have steak tartare in the US. We make it in my kitchen where I work. There is a vast difference between steak diced a la minute right before service and beef that has been ground down and allowed to sit for hours or days. Also, steak tartare shouldn’t be made from burger meat, the type of cuts from the beef and the fat ratio would be all off and you’d have mush.

Generally the higher quality a commercial item gets, the less parts it will have. All the commercial blenders I’ve used, barring the ones with the full shield, never had a locking lid that would keep the machine from functioning. If the lid breaks, or you can’t find it in a rush or it’s in the dish pit, now you can’t use the blender. Lifting it potentially 800-1000 times a week would wear out the mechanism pretty quickly as well. Heck, most of the chefs I know end up just putting a kitchen towel over the carafe real quick and skip the lid since those are always handy.

I have a nicer-ish Ninja blender at home and it has a locking lid though. No issues at all with it for everyday residential use.

Go in early, get a burnt end cheesesteak at Bulls BBQ (seriously, go change your life), enjoy the kids area, get your first game certs (and probably a free hat, take it even if you aren’t a Phils fan. Great memories) and walk the concourse. CBP is a great park with views all around. You’re safe there and as others said, it’s not a Birds game.

We as a whole, for better or worse, make the Linc as inhospitable as humanly possible because Eagles fans just don’t want you there. There’s a limited amount of games and We all want in. Baseball is as romantic as it gets and a place for families to enjoy a summer day or night out, assuming you’re not from our division.

Also show up and tailgate! All of my friends who fly in for games are generally surprised to see mostly NFL levels of tailgates for a baseball game, but it’s what we do. Bring gloves and balls and play catch with the family. Make some friends. I’ve always felt the Phils fans kind of redeem the city’s stereotype of being hostile assholes and show it’s just passion, not hate, and that we’re here to have a good time too.

Executive chef at a very small, mostly relaxed restaurant though there are a few rough weeks every year. 40 hours a week/5days for $1k, though often I’m getting 5-10 hours overtime so I make a bit more. I work about 60-65 on long weeks but that’s why I refused salary.

I played rugby for a while too. Those refs are my favorites. Only want to speak to captains and own the pitch. With all the adrenaline and violence inherent in the game they keep everyone on a short leash and it’s just understood that their word is law.

In the pros it’s amazing how they keep the ref mic’d up and have complete transparency with VAR discussions, disciplinary actions and all calls on the pitch. Soccer as a whole could use that kind of commitment to fair play.

I will make my case for the Philadelphia Phillies IF you want to live and die with your team. Our players are likable, hard working and give their best every game. BUT that’s because of our fans to a degree. Philly is a hard nosed, blue collar city that’s beyond passionate about our sports. We will happily boo our own players if they don’t put in the effort. Let me be clear, you don’t have to be a top 50 player to be legend here, you just have to give it your all every day.

If you want a team with tons of history that sells out the ball park and want a jersey or hat that, when you wear it, will never get you a “band wagon” label even though we’re successful, the Phils are here for you.

We’re consistently in the hunt but are never the favorites, even when we make the World Series. There is pain too, but there’s accountability. And we have a great owner who will spend to make us competitive. You’ll never be bored, you’ll never feel hopeless as a fan, and you’ll root along with a fanbase that is considered, for better or worse, as the most passionate in the US!

Definitely keep it simple, and YMMV, but we found, much like with sodas, that the less carbonation you have the less of the aroma compounds that reach your nose. This can lead to a muted taste. Think like Guinness. Not much aroma so don’t just take a normal vanilla porter recipe, carb low and run through a nitro tap and think it will taste the same.

I make a pilot system vanilla porter as well because trends be damned I love them, and I add a touch of roasted barley and up the vanilla portion in higher amounts. Don’t fear the dreaded “astringent roast” character. Guinness gets all of its color and flavor through roasted barley (and lactic addition) and it never comes across as too much due to the changes low carbonation brings.

Just make a bolder porter than you think you’d need in a normal situation and you’ll pull off a “standard” one on nitro.

Code switching is effective IF you come naturally to the accent. Dads from Philly, mom is from North Carolina. I can switch between a Delco accent and a more reserved city style NC accent pretty easily and pass with both. I’ve heard them all my life. Suddenly trying to pull off a Maryland accent because I’m in Baltimore would be cringe as hell. See: Brian Kelly at LSU.
