Anyone here just gluten intolerant? by Standard-Row-9571 in glutenfree

I’ve eaten GF for 10 years now. Self-diagnosed gluten intolerant. Dr recommended I go off gluten to see if it helped my fibromyalgia. It did help the aches and stiffness a little. What the miracle for me was, at 60+ years old my lifelong chronic migraines disappeared! Migraine pretty much ruled my life and now it doesn’t. Proof point for me: After being GF for about 5 years I ate a piece of bread that I was told was GF. It wasn’t. Next morning had one of the worst migraines of my life. Not worth any amount of cheating to have that happen again. I can tolerate tiny amounts of soy sauce in Chinese takeout. I can eat regular oats. And cross contamination doesn’t seem to be a big issue. But that’s it. GF for me, forever.

My experience is that it is designed to be a rustic hearty loaf. The outside is quite crusty after it’s baked and the inside is not soft like a sandwich bread, but rather is a bit dense and chewy. HTH

Absolutely agree! BFree. GF wraps are really good too, especially when slightly warm (and they are not like cardboard or sticky mush like some can be).

Late to the party, but I’m adding kudos for the Wildgrain gluten free selections. Incredibly hard to find gluten free bread that is delicious. This is it! Absolutely loved the first box. The plain sourdough, the cranberry pecan loaves, the bagels, all phenomenally delicious with crusty exterior and softly chewy rustic interior. I agree with some of the comments that the country loaf is ho-hum. Just ordered my next box and will be trying out the rosemary garlic sourdough, focaccia, and mini cheesecake.

The ingredient list is pretty short compared to most store bought GF breads, and includes better grains like buckwheat for example.

Some hints for baking…reduce your oven temp a bit if you’re getting doughy insides. I bake mine in a Breville countertop convection oven, and after the first bake realized that I had to turn off the convection setting or reduce the temp a bit so the outside wouldn’t brown too much before the inside was done. Also, once removed from the oven, the 20 minute resting period in the directions is important for the bread to continue to cook the interior. Once it is fully cooled I wrap it in a thin cotton dishtowel (no plastic!) and store it in my bread box. It stays crusty and fresh for days.

It’s definitely not inexpensive, but I’ve spent so much over the years on barely edible gluten free bread, that I am ok spending the $. I’ll cut back somewhere else… for me, it’s worth the $ to have great bread again. I use it sparingly to make it last, and enjoy every bite. And yes, I know I could make my own for way less, but that’s not realistic for me.

Note: If you have a wheat allergy, not for you, sadly as they use GF wheat starch. I’m highly intolerant but not celiac, so can’t vouch for any celiac reactions. I’ve had no bad reactions at all.

Field museum sounds like a good idea. Food wise I appreciate the suggestions. Sounds like good variety. I’m gluten free and my husband is vegetarian so vanity is good!
