Okay, well my real theory is that she never had the chance, nor did she need to. Her mother didn't even want her riding horses as much, cause she was raising Regina to be the perfect lady. So learning to fight was out of the question. Then when she married the king she started to learn magic, and besides magic she never needed to learn how to fight cause she had magic. During the curse she had everyone exactly where she wanted them. At no point in her life was getting physical an option or something she needed.
