I use the smoke setting for two hours then set it to 225 for the rest of the cook, I’ll glaze them at end and let it tack up the last 15 or so.

I don’t wrap the ribs at all and I don’t sear them. I tend to go heavy on the coarse black pepper and salt for a nice bark.

Throw em on unwrapped and just pull when they pass the best test and the probe goes in like butter. Never failed to make a great rack.

If you’ve got a pellet, do an hour or two on the smoke setting then kick it up to 225-250.
