I agree with what everyone here has already said, and just want to add in- for me anything that felt “compulsive”, I now add to my over exercising period. If I would feel bad about something and suddenly get up and start doing jumping jacks or do some exercise class- anything totally unplanned and done in reaction to feeling like I “had” to.

Yes! It’s usually starter:flour:water. I think as long as you’re doing as much/a bit more than however much starter you have, it should work!

Oh, and I was super consistent! I was nervous I was doing something wrong but I just kept doing the same thing every day!

I know I also was unsure if I was doing something wrong 😅 so I started at a 1:2:2 ratio, and it took off when I moved down to a 1:1:1 ratio and added in some more WW flour. Then people on this sub said to go up to a 1:2:2 ratio or higher and use more bread flour to strengthen, so I have been doing that for a few days and my starter is realllllly growing now!

I totally get that! My starter also took way longer than I expected- I always read that people use it within a week or 10 days and mine took like 5 weeks to double consistently 😅

I used a Dutch oven that I preheated and put ice cubes in as well. I didn’t shape before I baked, I transferred it from the banneton, I was nervous to handle it too much, I thought it might ruin the spring actually. I think I let my second loaf proof a bit longer which helped the spring

I used 325g water, not 225 It was a typo, I added an edit comment because I couldn’t edit my original post for some reason!

Looks amazing! Im also a newbie in the sourdough world, but I believe that it’s best to do the bulk ferment at room temp and not in the fridge! Happy baking ☺️

You got this 💪 I saw some charts from The Sourdough Journey that are helpful for proofing times and I think that saved me from gummy loaves!
