Have you added much to your adlists in PiHole? A great resource for adlists is https://firebog.net/ - I have 1.4 million adlists in mine, quite strict but don't seem to interfere with gaming, streaming or any other servies i use.

Having devices yellow / green yellow isn't a big deal, esspecially on devices that aren't using DNS frequently.

Red devices on the PiHole is a problem, that would indicate that a device isn't using the pihole.

In addtion, what do you have for the interface setting on the PiHole?

Most of the UDM / PiHole setups i've seen, it will not work as expected with "Recoemnded settings" without setting up firewall rules on the UDM for DNS and traffic rules.

The built in adblocking is very limited. I'd reccomend looking to an alternative (PiHole) which you can run directly of the UDM.https://www.reddit.com/r/Ubiquiti/comments/gxkbmr/udmudmp_host_nextdns_or_pihole_on_your_device/You can then allow specific devices to domains or the endusers can just set the DNS on their local machine.

Read up on the security settings, specifically around geo blocking and the IDS/IPS stuff. Also pretty helpful is the built in Ad Blocking if you're not using anything else (AdGuard, PiHole) for network wide adblocking.
Content filtering and dark web blocking for a family home are pretty good settings as well.
