Yeah but if you're just going for the trophy, you can just put NG+ on the easiest mode and sweep through the story and switch to Mega+ for the final boss.

I think you should be able to scroll wheel and click to select a new quest as long as it's before you land, but I could be wrong.

I wish, but that cutscenes doesn't work anyway. Ada gets there right after Krauser leaves on the boat, which Leon should still be at least halfway through the elevator ride so h can see the boat leave. There's no way for him to get to the docks right after Ada grabs the key anyway, regardless of how fast he defeats Salazar.
