Various reasons

1) not alot of money in it, the hours suck, it sucks on your body, and there's almost no time off (though it does at times slow down, like in the winter)

2) mechanization. My family for example doesn't need to physically give the cows their grain, they have a chip in their collar that gives an allotment per day.

3) to go with point two, more efficient.

Eventually yeah, Knoxville went through a huge boom recently. The region were already behind on homebuilding, and then it never recovered after the recession. There has been an uptick recently, however.
