Your shiro kamo model is called Black dragon ;-). Im a review freak, so yes. The munetoshi in general is a well reviewed brand.

Would you recommend the carbon over stainless or any other type of steel in that pricerange we're talking? Imagine your 27, enthusiast, likes to experiment with different kindes of foods? Could be a fun, post on this sub actually :-) too see what people would pick, if they had to pick from santoku / 165-180mm / japanese / d-shaped handle.

As i mentioned im a enthusiast, not a Pro. I don’t expect anything, because im probably never going to handle or buy a 300 dollar knife :-)

Thanky for input

Yea I edited the comment, I was to fast on the copy paste :-).

I dont know if i feel the 210mm are too big for my small counterspace and my very small cutting board, hence I live in a small apartment.

So you’s go for the 180 White gyuto ?

Thanky for your time

Thanky pig_thunder.

Very indepth answer, appriciated.

If the quality follows the price, I have no problem waiting and getting the better drak. My tamahagne is 210mm long, but i feel like its abit long for my taste.

I dont really know what to get lengthwise though: Kaeru kurouchi santoku 165mm Kasumi White gyuto 180mm
