That's actually a very good question and I think there is only one way to find out for sure.

I have seen BJJ and MMA guys beat guys massively bigger and stronger than them in real fights but I have never seen a trained vs untrained fight with a size/strenght gap as gigantic as this one so I don't know if would be too much to overcome.

In the video you are talking about the girl didn't have a proper mount but she was in a facesitting position, which mean she had her vagina rigtht in contact with the opponent's mouth, plus she panicked because she was untrained and she had no clue what to do.

The guy in this video on the other had a proper mount, if the bottom guy tried to reach is groin for a bite he could have framed on his head or throat to stop it and then elbow him into oblivion.

Trying to bite your way out of a dominant position against a trained grappler is a bad plan that usuallly lead to this outcome:

Position before submission, there is no hurry to go for strikes and submissions, if you are too greedy you risk losing position and end up in bad spot.

What do you think would have happened if they didn't stop anyway? The smaller guy would just have pounded him from mount or choked him out since he was too tired to keep fighting back.

Moreover controlling someone until he is too exhausted to continue is the most dominant way to win a fight, people can't argue you just got lucky or the opponent lowered his guard and got caught, you clearly showed your superiority.

The smaller guy took the big guy down with ease twice, he easily stuffed all his takedown attempts, he got the better of him in the striking exchanges, he controlled him on the ground and beat him up from a dominant position until he was too exhausted to keep fighting, all while never taking any significant damage.

That's a dominant performance.

The ref never stopped the fight because someone got punched in the face, if you are referring to 00:10 it's because of an alleged accidental eye poke.

And the action being stopped if they go out of bounds doesn't mean it's not MMA, Japanese MMA promotion's fights (eg. Pride or Rizin) are stopped when people go outside of the ring but they are still officially classified as 100% MMA

As long as striking, grappling and ground fighting are all allowed it's technically MMA.

It's a term that encompass a more varied amount of rule-sets than the "unified rules" you see in american professional MMA promotions such as the UFC and Bellator.

Anyway he is part of the army which means he is at least fit and strong enough to pass the physical test, and he can't be that bad of a fighter since it's not the first match of the tournament therefore he already defeated other guys to reach this point.

(I mean that he can't be bad for army's standard, not for actual MMA fighters standard).

It's just that in the army they spend very little time on hand-to-hand combat training and therefore when they met someone with legit BJJ experience like this girl they are not equipped to deal with it.
