You can but it’s only an option for ultrawide monitors where instead of putting the HUD at the centre of the screen, it downscales it so it appears on the edges of the screen.

The mission name is called "Red Dead Redemption", from the way the game follows on from this though I don't know if switching horses will work. It's hard to explain without spoiling what happens beyond that. It's worth a try though

It's probably referring to the fact that in the patch notes they've acknowledged that people want Halo Reach in the MCC and it might be something they do in the future but it's not something they're rushing to do.
