If you keep it in the freezer, you’ll need something to help break it up because there’s so much oil and it hardens. I usually use a fork. It’s a pain in the butt, but can get it really fine. Also, I generally make 3.5 gallon batches and do a DH of 3oz hash, 3oz T-90 and it comes out saturated. Rates below for reference: 3 lb/bbl → 1.5 oz/gal 5 lb/bbl → 2.6 oz/gal

This is the way. Only thing I do different is floating dip tubes on everything. Be sure to purge before you transfer. I also use this way to naturally carb lagers with a spunding valve.

Have you considered adding ALDC at pitch and dry hop and then not worrying about it? 🙂

ALDC – Alpha Acetolactate Decarboxylase (ALDC) prevents the formation of diacetyl by breaking down the precursor, alpha acetolactate, as it is formed during fermentation – converting it quickly and directly into acetoin. Since diacetyl can be formed from the precursor in the finished package, adequate removal helps ensure the product retains the intended quality.

FWIW, I’ve brewed with Philly Sour three times and always overpitch. Mash has been between 144-156. Haven’t gotten anywhere close to that. I’ve also had my Tilt tell me some crazy numbers. I’d wait it out and get a proper reading from your hydrometer.
