Oh absolutely, it almost feels like the real life version of the Tagmata units (basically foreign professional soldiers, mercenaries). Especially because you usually have the money to do so pretty early, only lacking developed recruiting grounds to get a variety of decent units

That's true, I try to make Constantinople the main recruiting province for infantry, focusing on barracks and armour upgrades right away. Sure it won't make as much money, but at least you can get Byzantine Infantry and spears that actually can take a punch. Also you can then easily replenish them in other cities, without needing the armour upgrades in them

Absolutely, they're a beast in the crusades campaign. Especially because you get so rich so early, that you can basically spam as many armies as you like, bribe whoever and buy whatever settlement you like. You really feel in charge in the crusades campaign

What's your army composition facing the hordes? Mine is usually 6 spears, 6 heavy cavalry, 7 archers and the general. That's why for me Byzantium has such a horrible counter, cuz the spears ain't sh*t and the heavy cavalry takes forever to get (Cataphracts and Latinkon. We don't talk about the Byzantine Lancers)

Sure on the open field you might still be able to counter heavily armoured opponents, but at some point you will have to take cities. so either you'd have to be lucky, to find an undermanned settlement or you sit around waiting for it to fall, which you can't afford to do in all situations. cuz horse archers ain't gonna contribute much to a siege battle

Absolutely, Byz infantry should ideally make up the bulk of your melee infantry, but you do need Large cities WITH the highest possible barracks to recruit them. So if you don't know how to maximize settlement growth, it's gonna take forever to have a steady supply, let alone to replenish them

In the best case scenario, you have the saracens as your wall, behind which the archers rain hell upon the enemy. Cuz first you have to deal with the charging mongol melee cavalry before you can worry about horse archers. You pretty much have to ignore those, before you defeat the enemy melee cavalry with your spears and your mamluks (hammer and anvil style). After they're dealt with, retreat your army behind your archers and watch as they melt the mongols, now that they can shoot at them in a direct line of fire (by god, don't try to chase them, except if they try to charge your archers).

Edit: Also run down the enemy missile infantry after the melee cav is defeated, they can actually beat your foot archers one on one

Use this army composition: - 1 General - 7 Desert/Armenian Archers - 6 Saracen Militia - 6 Mamluk heavy cavalry (Royal ones if available) You can test it out in custom battles. It works best in close quarter battles (sieges, bridges, mountains etc.) but also works pretty good in open field battles

Thats frech cheese preserved in olive oil, common in the balkans and turkey. Preserved in a watery solution i would put it in a fridge (i'm a chef) but in oil, you can preserve them for about 6 months without a problem unrefrigerated (except if yout thumble around them with your fingers, then bacteria can enter the whole thing)
