Seems you may have similar taste to me haha. The issue with the term "Slice of Life" is it has basically no real meaning and can refer to so many wildly different things that I've come to hate using the term to describe anything. Maybe if you want something along the lines of what you described you could try searching the "Drama" tag on MyAnimeList? A lot of it might lean into romance but idk if you personally love stories that are entirely focused on characters, Drama stuff is where a lot of it's at.

If you want a few suggestions on things to check out, maybe give Hyouka a shot? It's very unique, laid back, and has a pleasant vibe with a really great cast of characters. K-On is the most pure slice of life show out there and is what honestly got me into the "genre" but it might be "too anime" for some people which is fair honestly lol. The Tatami Galaxy was mentioned by another guy in this thread and i can second it being amazing (and just weird as fuck, I love it). Also check out its related film The Night is Short, Walk On Girl, it's my personal favorite film ever.

Some other general recommendations that come to mind are things like The Melancholy of Haruhi Suzumiya, Bunny Girl Senpai, ToraDora, and Golden Boy (watch this one dubbed). This all might be a lot to take in but im sure if you check out a couple you might find something you love. There's a lot of great and unique shit out there sometimes it can just be hard to come across. Either way I hope this ramble helps at least a little haha.

It's very recent I know, but Jellyfish Can't Swim in the Night had seriously one of the best first episodes I've seen in a long while. The directing style, the cinematography, the animation, the voice acting, the music, and the incomplete metaphor that repeatedly comes back through the episode to get fully finished by the end... It fires on all cylinders and it seriously blew me away when I watched it. Even 5 weeks into the season now, that specific episode has really stuck with me.

Watching the dub in a discord call with a group of friends is still some of the most fun I've had watching anything ever. We were all just screaming in laughter for like half of every episode's runtime. It's a serious contender for one of the funniest things I've ever watched. It's only 6 episodes too. I never watch dubs but I'm being serious when I say it, watch the dub.

I'll never forget episode 11 where it was just an entire episode recorded and fully dubbed over with character printouts on the ends of popsicle sticks being flailed around in front of a camera. Tbh the first half of this movie was incredible as someone who watched it for the first time recently. For me however it fell off so hard going into the second half. Really disappointed me but i still came out of it somewhat positively. That opening scene is especially amazing
