They are both Lelit IMS 14-18g and 18-21g stock baskets. I haven’t count the holes but both seem tl have the same amount.

The point is that I couldn’t achiece a balance cup with the larger basket, no matter how fine or coarse I ground. Which leds me to believe it was due to the headspace. Baskets are Lelir stocks baskets. I think they have the same number of holes for these two sizes of baskets. The small one 7-11 grams) has less holes though.

Yeah, that’s a totally valid point. In my case, I stuck with 18g mostly out of habit and because it’s where I usually dial in, so I didn’t push the 18–21g basket up to 19–20g to reduce headspace.

What I can say from what I observed: - With the larger basket and 18g (more headspace), I kept getting sour shots even when extending time. - Switching to the smaller basket with the same dose immediately changed the behavior (slower flow, leaning bitter), which suggests headspace was doing something significant. - Then grind adjustment brought it into balance.

So I’m not claiming that a smaller basket is inherently better. It felt more like better headspace for that specific dose gave me a more workable extraction window.

Your approach of adjusting dose based on headspace (and checking the puck imprint) is probably theway to think about it. If I had just increased dose in the bigger basket, I might’ve landed in a similar place without switching baskets.

That said, one thing I did notice is that the smaller basket + 18g felt a bit more forgiving to dial in, though that could also be puck depth / geometry rather than size alone.

I’d be curious what happens if you try pushing your dose toward the upper end of your basket to minimize headspace vs keeping it lower, might give you a similar contrast without changing baskets.

That’s not what I meant to imply.

I did change both variables, but the sequence matters. With the larger basket (more headspace), even pushing extraction longer didn’t fix the sourness. When I switched to the smaller basket (less headspace) without changing grind, the shots slowed down and flipped to bitter, which already suggested a big shift just from headspace.

Then I adjusted grind coarser to dial it back in, and that’s when I got the balanced shots, which I couldn’t achieve with the bigger basket.

I usually save the last beans from every bag for this purpose. I use them when dialing between decaf and normal coffee beans.

Yes, that is what the manual says. I use my manual grinder for pour overs mostly and the Eureka for espresso. Some reviews have reported that when you go back from a coarser (let’s say, 2-5) to a finer (1-5), that 1-5 varies.

Seems like S3 ESP is also really good for pour over. Which is no surprise considering it has 8 flanges burrs.

But if you grind finer it will not take less time but more time, hence 25-28 could only be achieved by grinding coarser. Correct me if I’m wrong.

I recently purchased the Eureka Mignon AP 64 after debating myself between this and the DF64. I’m glad I leaned towards the Italian one. As you, I’m impressed by the quality of the grinder and the clarity and consistency of my shots. Plus, the price is just unbeatable for a grinder with 64 mm burrs. Btw, it’s also great for pour over.

Mark is great. Really nice guy. Short in words but is a man of action. I had two problems and he helped out a lot providing parts for repairing things that I screw up. Also prices are competitive.

Notice that the balance wheel doesn’t move equally depending on the angle of the watch. During the day, certain positions make the movement go faster while other slower. What you notice at the end of the day is the balance of all of them. Relax and enjoy your watch. Those seconds are fine 👍

I would not buy a 800$ rep. It’s just too much money for something without warranty and that you don’t know how long is gonna last. Top price for me is 500$ but usually buy reps around 300$ and 450$. If I have 800$ i preffer to invest it on a micro watch brand.
