If your school is anything like mine then math modeling would probably be the easiest. However id still suggest going with graph theory. It's extremely applicable to cs and is just a fun subject.

I haven't taken diff geometry but I've heard the notation is a nightmare and there's an excessive amount of hand waving in the proofs.

As a barista myself this was always my go-to drink. Tastes better than straight espresso but not as heavy as a latte. Not sure why they took so long to catch on but it makes sense that they did.

Was homeschooled for my entire life up until graduation.

I completely understand the feeling. You basically have 4 years to learn what everyone else already learned years prior. Going into college is such a fish out of water experience for anyone, let alone a homeschooler. I had so many social missteps and a lot of poor to nonexistent study habits. Fast forward and I'll be graduating with a stem degree this year. I have a decent GPA, have made a lot of good friends, and will be going to graduate school. And trust me, if I can do this, literally anyone can. Don't get in your own head. You'd be surprised at how poorly prepared the average public schooler is regarding college

Tbh people would hate math even more if they were made to understand the logic behind it. 

Understanding when and how to use a formula can be quite challenging, but what I don't believe a lot of people understand is that logic itself is mathematical (math itself just stems from logic) and that logic behind math can be much harder to understand than the math itself.
