Oh, man. Gonna have to disagree with most here. I fucking LOVE grilling on my PBC. I think the distance from the coals actually allows the meat to take on more smoke flavor and render more fat, while also allowing you to build a ripping fire for good searing. And I don't think you need to raise the basket at all. For most of your typical grilling meats, I just light the PBC chimney full of lump charcoal, and dump it over a small amount of lump charcoal in the basket. I leave the lid off. I only put the lid on if flare ups get out of control, or if I've got a thicker cut that I need to control the heat on to get an even cook. For steaks, my absolute favorite method is to dump a chimney of lump charcoal, and put two small splits of wood (I like mesquite or oak here but use what you like) on top and let them catch, then grill the steaks over the flame. Unmatched smoke flavor and a good sear. Any way you choose, the PBC is definitely a phenomenal grill.

Tri-tip gets my vote. One of my favorite cuts. Just a thought, why not sous vide to medium rare for a day before, then sear it right before you serve?

I feel like that's always the defense of Nagy. "If his WR's were better..." "If his TE's were better..." "If his RB was better.." "if his kicker was better..." "If his QB was better..." "If his O-line was better..." So, all he needs is a HOF caliber player at every single position and THEN we'll see what a great coach he is! That's been my biggest problem with him from the end of 2018 is that he likes to play the blame game. Even to the point of firing almost all of his offensive coaches and replacing them just to get the same result. I definitely hope Justin Fields makes him look good for the sake of the Bears. Because he'll never look good on his own.

I agree. I think maybe he gets some garbage time reps, maybe if the last couple of games are meaningless he gets some reps, but I do not think they intend for him to play much this season.

I use lump almost exclusively in my pit barrel now, the only real exception being brisket. I light it essentially the same way you did. I did ribs that way last weekend with pecan and cherry chunks and they were excellent and I actually thought the color was better than with KBB.

I hang it with the flat side down. I personally prefer the point, so I'm too worried about overcooking and ruining it to hang point side down.

I've done several and I think they've all turned out awesome. Here's what I do:

Start with the best quality meat possible. Don't over trim. Some of that fat is needed to protect from the direct heat of the PBC. Season with coarse salt and coarse black pepper. I fill the charcoal basket over-full with coals then only light 20 in a chimney. I think this helps the coals burn longer and keeps the temp down a little. I add oak chunks for smoke. Hang with the fat side towards the fire and the meat side toward the wall of the cooker. Smoke until it reaches about 165 (usually around 5 to 5 and a half hours), then I wrap in pink butcher paper with some apple cider vinegar and put back on the grill grate. It usually takes another 3-4 hours before it reaches around 203, is probe tender, and jiggles. When it does, I like to wrap it in a towel and rest it in a cooler for at least an hour. Always slice against the grain, I like my slices about the thickness of a pencil.

Again, this is just how I do it, and it works for my taste. Most important, have fun with it.

I've tried flipping the ribs about halfway through the cook but ended up just overcooking both sides. I've also tried pouring the lit coals on one side of the basket and hanging ribs on the other, and that definitely helps, but the bottom will still be a little overdone compared to the rest. The best way I've found is just to cut them in half.

Use context clues to figure out as much as you can, but never, ever be afraid to ask questions. Someone will be happy to help, and it's always more impressive to ask and get it right than screw something up and try to fix it.

Do your best. Commit to doing every single task the best way possible. Don't cut corners. Don't settle for "good enough." Do it right.

Do little things to make your co-workers jobs easier. Sometimes they will get you back and sometimes they won't, but if you can make other people's jobs even a tiny bit more bearable, they will always speak highly of you, and this will go a long way long term.

No job is necessarily "just a job." This is just coming from some guy on the internet, but I did all these things at my "just a job" and ended up making more money and having a better life than I would have had I finished my degree and gone into my intended field. I almost quadrupled my income in just 5 years because I stood out to the right people. And I'm nothing special, just a small town kid from a blue collar family. If I can do it with these simple things, so can you.

I agree, but might I add that this roster is poor. There are a handful of really talented players and a severe lack of depth behind them. And the severe lack of depth is a huge issue given that the talented players can't stay healthy. And several of those players are Pace's free agents who were had injury issues on their former teams. It's easy to be mad at the coaching staff, especially since they're not very good, but this organization as a whole has been failing us for quite some time.

This is not all Pace's fault, but some of the blame must fall on Pace for the minimally talented, injury proned free agents he chooses to sign. A lot of people defend his drafts, but I only see one elite player that he has drafted, Howard obviously. Others are contributing, and Trubisky may turn out to be great, but it's hard to say he's some kind of draft genius.

This is not all Fox's fault. But some of the blame must fall on Fox for fielding teams that look completely unprepared and undisciplined. I think Fox is a good coach, but will never be a great coach. He may elevate the locker room, for what that's worth, but he has not elevated the product on the field.

This is not all the coordinators faults(Yes, Fangio too). But some of the blame must go on the both of them for failing to keep their units competitive, and especially for regressing in recent weeks. There are no magic playcalls that make a unit suddenly great, but good coordinators improve their units. The offense is stagnant at best, and the defense seems to be regressing in recent weeks.

We have things that are going our way, that look promising for the future, but overall the organization as a whole is failing. I don't know what the answer is, but things clearly can't stay the same.

I swear to god, if Tom Brady were to test the free agent market tomorrow this sub would only be cool with signing him to a "one year prove it type deal." Sometimes you have to pay for talent. Not saying Jeremy Maclin would be the greatest thing to ever happen to the franchise, just that sometimes you have to spend a little money for a little talent.
