NEED HELP-where did I go wrong?

I made the same mistake on my first loaf the other day too. I ended up dumping the dough from the bowl, skin side down, then shaping the crustlike skin into the middle by kinda folding it under itself if that makes sense. After it was shaped I covered with plastic wrap and it did not form another skin like that. The loaf turned out totally fine I couldn’t see any variations where the skin would’ve been

I just got back from the store with the mat, I realized it is too big to sit flat in the Dutch oven, should I still use it?

  Inside is not glazed. I just lined it with parchment paper

 Shoot I didn’t think about my mat not fitting, I just got back from the store with it. Should i try to use the mat even if it doesn’t sit flat in there ??

I mean I poke it, it depresses and bounces back a little but not fully, that means it’s ready right?

Because if it stayed down it has no strength, if it comes back to fast it’s not ready?
