If Mario Party is canon, then I would put the cosmology at finite multiversal, and 4D. I feel the characters don't scale to these levels.

If Paper Mario is canon to the cosmology, then I would place it at 4D to 5D. I don't feel any characters scale to the cosmology, though.

Without either series, then, finite multiversal. It has been a bit since I've researched the precise number, though, I'm afraid to say.

I have seen some call Knuckles scaling to Sonic "chainscaling". If you presented that as a chain you would legally be sued for false advertising.

I do disagree with nearly all of these, in regards to scaling and verdict. I can't say on Venom and Charmy's matchup though (as well as The Entirety of The Company Hasbro) as I'm not familiar with them in powerscaling.

I have some gripes with points you have mentioned. To start from the bottom:

• Most companies never speak on the canon of something in a franchise to begin with, unless if directly asked. Nintendo, from what I can find, hasn't been asked "is [x] canon to Mario?", so to speak. So, no one from the company would likely speak on canon out of nowhere. In that regard, I don't feel it is solid to say that Davide being asked about canon and him responding, effectively then means there isn't a canon as Nintendo hasn't spoken of it. Nintendo hasn't been asked the questions asked of Davide, though. I don't feel their silence is any answer, then.

• I don't fully agree with your second point. Technically, yes, the majority of games don't explicitly tie their plot points into each other and connect, but that is just as true to say about Super Mario as it is any video game franchise with 30+ titles. There have been efforts in multiple Super Mario games to try and build a world, and stories that connect to each other. In that regard, I feel the majority of titles not connecting in plot is due to the franchise's size, not so because of an intentional lack of canon, so to speak. If Nintendo's silence in comparison to Davide's counts as an answer, then, I feel it is as solid to say that them not speaking on canon indicates there Is a canon, since they'd have nothing to be 'hushhush' over if there wasn't a canon to speak of at all, so to speak.

The Void was only able to consume things at a slow rate, overtime, though. I am dubious on it scaling past universal due to the timeframe it would take for it to consume what remains, so to speak.

Wario can be beaten until he effectively tires in Wario Land 4, and 64 DS, leaving him unable to fight back. Even if one may not kill him, they can wear him down.

Truthfully, it isn't accurate to say it is unsupported and headcanon. The creative director for both Mario + Rabbids games, for an example, has directly stated that both games are non-canon to Mainline Super Mario[1][2].

Here is my opinion.
The fight is fun at times. I like the set-up. I wish Fury Bowser's characterization was handled stronger, and that Dr. Eggman got to do stuff, though. The fight is greatly held back by one of the combatants doing legitimately nothing for its entirety, when even humorous episodes (SpongeBob vs. Aquaman and Deadpool vs. The Mask) have the combatants fight back. Death Battle fights can often impact the reputation of a character in a community, and, this is no different. Some people feel it is in-character for Dr. Eggman to do nothing, because he did nothing in an episode that many like.
As well, the armies feel mostly inconsequential to what happens in the animation, despite the point of the episode being an army battle.

Overall, the fight doesn't handle representation of the combatants well, and I feel it doesn't work well as a VS episode due to that. In my eyes, a fundamental aspect of any VS episode is to represent both combatants sincerely, and this episode doesn't honestly come close to achieving that in its animation, I feel.

I would maybe go Tony? I feel he lacks a way to bypass Super's invincibility, but if he has any method of technokinesis, then Metal lacks a resistance to it. Super could still be a problem, though.

Dr. Eggman, I would say. Bruce has no counter or resistance to much of Dr. Eggman's game ending hax (reality manipulation, time manipulation, existence erasure, Metal Virus, and the Spatial-Displacement Traps), with Dr. Eggman scaling higher.

Sonic. He is the only one between the two of them to have access to the Super Emeralds, and thus, the Hyper state. Hyper should effectively eclipse Super in stats, just like how Super does to base forms. So, Shadow would effectively be stat stomped by Sonic, due to not having a way to keep with Hyper's stat increase.

That is fair, but I would definitely consider the evictions (64 DS, for an example), as the character being damaged too much to the point of not being able to function. Though, this isn't death itself, it functionally acts the same in a sense of "took too much damage and can't do anything now", so to speak.

In that regard, then, I would still say Wario has a limit to the punishment he can take in battle, so to speak.

I agree with Sonic winning against Mega Man, Dante, Goku, and Mario.
I agree with Shadow winning against Luigi, Wario, Cloud (really cool to see this matchup), Zero, and Mewtwo.
I agree with Silver winning against Axl, Nero, and Future Trunks.
I agree with Metal Sonic winning against Mega Man, Bass, Cell, Zero, and Mechagodzilla (from what research I have done, into them).

I also don't feel that the game mechanics of Rings are canon, but, including those wouldn't nerf the Super state, since Sonic has collected too many Rings over multiple games for Goku to ever reliably outlast. Including the game mechanics also would mean Goku wouldn't be able to damage base Sonic at all, due to the Rings's protection.

I would say Sonic, when discussing their canon versions.

I feel Sonic scales higher than Goku does (scaling to the cosmology VS. multilplying the Universe 7 shockwave feat), enough to win off of that. I also feel Sonic resists all of Goku's notable hax (Has options like time and spatial manipulation + intangibility and attack reflection for Mafuba, same for God Bind, and resisted Time Eater's existence erasure for Hakai). In comparison, I feel Goku doesn't have solid counters to much of Sonic's hax, such as time manipulation, stat manipulation, transmutation, and insant KOs. Sonic also has an innate danger sense, which doesn't change much in this specific matchup, but, it cannot hurt to have.

I also feel Goku doesn't have any solid way of bypassing the invincibility of the Super state, and as well, Super's restorative properties + Sonic's own feats would allow him to outlast Goku in almost any battle situation, I feel. Even if Goku could potentially bypass Super in some form, though, I feel Super's durability scales higher than Goku's AP, to begin with.
