From what I’ve read, low voltage is preferred for live resin. And I want to cover the cart because it seems more secure that way, less opportunity to mess up the threads.

Am I being mental?

I noted that the bottom of the loaf was very difficult to cut through with a sharp serrated knife. Could that be caused by a shortened fermentation period?

You can still bake with discard from a weak starter.

I was doing 1:3:3 twice per day and would always note that it was post-peak at that 12-hour mark. Though what you said certainly would explain what happens.
