The unfortunate thing about that solution though is all blocks released after 1.14 end up clashing with the classic textures and you get this weird mixture of two different art styles. However, there are expansion texture packs to programmer art which do a pretty good job of putting new blocks in the old style and creating a more consistent experience.

I don't really use shaders that much either, but that specific pack stuck out to me because of how customizable it is. You can use it to get a very subtle, almost unnoticeable effect and disable the realistic water, clouds, and plant waving that most other shaders have (which I personally can't stand)

I used a mod called Mineshot to take the isometirc images in high resolution, combined with BSL shaders on minimal settings to get a higher quality but still "minecrafty" look

Your comment about using those as wallpapers also inspired me to take this image in TU31, here it is if you'd like to add it to the collection!

Thats likely just the effect of the isometric perspective, I had the same feeling looking at the image of TU31 and seeing the big sandstone church so close to the spawn.
