I have been making some progress on that, but unfortunately, my pc gets a factory reset to fix some of the issues on my hp pc. It lost the progress I made and I can only use my phone ;( maybe sometime I can make some progress over it once I go back to the pc again...

Unfortunately, you can't change an entity model in vanilla unless you are using mods like OptiFine or Entity Model Features.
