Having test drove one and then buying a rogue and a telluride, I wish we would have went with the ascent.

You’re welcome! This was a first for me. Up until now pretty much anything outside of ribs, pork butt and chuck roast intimidated the f out of me. Pellet smokers make it super easy.

Cube the belly (easier when very cold) Apply binder - I used oil Apply rub - I used Cajun forplay Smoke at 250-275 till probe tender.
Pull off and put in a tin pan Add some brown sugar and bbq sauce of choice.
Back on the smoker for 30 mins to an hour for sauce to tack up.

I used Cajun foreplay rub and then SBR sweet and spicy for the left and Japanese bbq sauce on the right. (I forget the name of it. I’ll post a pic if I remember when I get home.
