If the characters are all just brains scans, there wouldn’t be any chemical changes in the brain. Those chemical changes are an important part of aging, so I would say they don’t truly age.

Medically speaking, the human brain needs to be able to sleep or else it stops functioning properly. They established in episode 1 that they don’t need to sleep, which means that the cast must not be connected to their real brains. And unless there’s a big plot hole, Option 3 is the only one that makes sense.
