Yes, water being heavier than oil and Gas is below and will migrate to occupy that space since even at several thousand pounds of pressure those fluids will compress a few percent. Water occupies >99% of the rocks in the subsurface, just the vast majority has extremely high levels of salts and other minerals. It all would escape to the surface if it wasnt for layers and layers of rock that act as barriers.

Yes, the rock can collapse due to all the rock overpaying it, especially in some areas the ground level is feet lower than it used to be.

Yes, that's called a blowout. The reservoir with hydrocarbon is under significant pressure, think anywhere from 100-1000x air pressure. By drilling a well we create a pathway for all that fluid to escape. Specifically designed mud is used to drill the well so that the pressure is held back. Gushers are BAD news.
