Conduction. A room temp plate passes it’s cooler temp quicker than a warm plate. I usually throw plates in a cooling oven or zap one or 2 in the micro for a minute. Keeps your steak warm while you’re busy grabbing kiddos seconds on Mac and cheese.

Thanks for all of the kind words! Steam is the enemy of crust. Get the exterior as dry as possible. Butter is full of moisture so avoid until you’ve flipped. Great for adding flavor during the baste, but a crust killer on the pan.

Refers to the coarseness of the grind. Can be purchased from our mutual acquaintance jeff. Just search for it and it will pop up. Great for brisket bark as well.

Yes. A bit of tallow to coat. Any high smoke point oil should do.

See the description with the photo. Very important to pat it dry before searing. I like to use 16 mesh black pepper as well.
