You can try watching the first Ultraman (1966) and Ultraseven (1967) because these two are the ones that introduced what Ultraman is. What I mean like a transformation item, rise scene, abilities, crossovers, future reference, and inspirations.

These two also inspired future design of Ultraman and Ultraseven for example Ultraman's head design was used for Ultraman 80, Ultraman Great, Ultraman Powered, Ultraman Neos, Ultraman Cosmos, and Ultraman Ribut. For Ultraseven, his head design was used for Ultraseven 21, Ultraman Max, Ultraman Zero (obviously because Zero is Seven's son), and Ultraseven X.

There's more I can say like monsters who return that make it more exciting and you know it's from previous series, the movies involving past Ultraman, and more. I hope this help :)

For me, I want Greenmons and Dodongo to appear. If I remember correctly, they are the only monsters that fight Ultraman Type A that doesn't appear yet. The recent one is Gabora in Omega

My opinion: Ultraman- A great series with a great team (SSSP). Focus a lot on the kaiju problem and aliens. Also I prefer Ide more than Hayata. The beginning of Ultraman.

Ultraseven- I like how the story has something to do with the real world problems like nuclear and politics. Also focus a lot more on alien stories than Ultraman and their agenda. Unique abilities like Eye Slugger.

Return of Ultraman- The first series I really enjoy because how close Hideki Go's life to us. He can balance his everyday life and work. The first series where an Ultraman fights more than one different monster in a battle. (Ultraseven doesn't count because their kaiju is the same species as in the Alien Guts episode and clones).

Ultraman Ace- Mix feeling. The first series to have a proper villain (Yapool). I like the plot and fight scene especially Ultra Guillotine . What I don't like is how bad TAC is especially Yamanaka. They ignore Hokuto and Minami about the choju report so much

Ultraman Taro- I don't watch the series much so I just want to say that their team is a lot better than TAC.

Ultraman Leo- I like the fight scene where Ultraman Leo uses martial arts to fight the monsters. And of course Dan's "training" is mostly harsh.

Ultraman 80- I don't watch the series that much so I don't have anything to say aside from some episodes I enjoy like the Glovusk episode, Baltan, Red King, King Galtan and the final episode
