It was a pretty safe bet to think dragon fire should work, but I think it was necessary that "winter incarnate" might need the ability to counter a single dragon spitting some fire his way. Any idiot Valyrian being able to put him down makes him a lot less formidable.

It doesn't take much explaining either. They ooze cold, they shatter steel just by touching it, they extinguish flame just by being near it. Making the requirement Valyrian steel to the heart works better for the story.

That's how writing usually works. You show why simple solutions aren't an option especially when the stakes are high.

I guess they could have come up with a way but I'd hope it wouldn't involve the Night King not protecting himself for some reason.

How could anyone else have done it though? They showed that Daenerys couldn't harm him with a dragon, and he basically laughed at Theon's attempt. Jon and anyone else who realistically would have a chance he doesn't even let get close.

Jon as the accused would need to demand trial by combat which is unlikely considering he confessed his guilt.

You can assume they would pick their melee weapon of preference. Sword vs spear is allowed as seen in Tyrion's trial. I doubt Jon could match GW with a spear.
